Spicy Raw Salmon & Shrimp Salad
Thai Isaan style, salad that is bright, bold and refreshing. Bound beautifully with fresh herbs, spices and toasted rice powder in a citrusy umami packed sauce.

Ingredients
- 6-8 oz salmon filet
- 3 oz shrimp (~10)
- 5 cloves garlic
- 1.5 tsp palm sugar
- 1 tsp shrimp paste Twin Chicken brand
- 1/2 tsp crab paste Pantainorasingh brand
- 1.5 tsp mud fish sauce
- 1 tbsp tamarind concentrate
- 2 tsp fish sauce 3 Crab brand
- 1 lime fresh squeezed juice
- Thai chili peppers desired amount
- 1 bulb shallot chopped
- 1/2 cup culantro chopped
- 1 lime thinly sliced
- 1 tbsp ground roasted rice
Instructions
STEP 1: INSTRUCTIONS FOR SAUCE
- To a mortar and pestle mash garlic
- Add palm sugar, shrimp paste, mud fish, crab paste, tamarind concentrate, fish sauce , lime juice, chili peppers
- Mash and mix ingredients until full blended
- Set aside
STEP 2: INSTRUCTIONS FOR ROASTED RICE POWDER (NOT PICTURED)
- Set pan on low heat
- Add jasmine rice to pan & stir occasionally until it reaches a light brown color (careful not to burn)
- Once brown, set aside to cool
- Then transfer to a blender or food processor to grind until texture becomes slightly gritty
STEP 3: INSTRUCTIONS FOR SALMON
- Slice salmon to approximately 1/2 inch slices
- Set aside
STEP 4: INSTRUCTIONS FOR SHRIMP
- Bring one pot of water to a boil
- Add peeled & deveined shrimp to boiling water
- Remove after 90 seconds
- Transfer to an ice water bath the remove after 5 mins
- Set aside
STEP 5: COMBINE AND PLATE
- Bring salmon slices & shrimp to a bowl & incorporate all the ingredients above. Starting with the wet ingredients, to veggies & top it off with ground rice powder
