Thai Isaan style, salad that is bright, bold and refreshing. Bound beautifully with fresh herbs, spices and toasted rice powder in a citrusy umami packed sauce.
Add palm sugar, shrimp paste, mud fish, crab paste, tamarind concentrate, fish sauce , lime juice, chili peppers
Mash and mix ingredients until full blended
Set aside
STEP 2: INSTRUCTIONS FOR ROASTED RICE POWDER (NOT PICTURED)
Set pan on low heat
Add jasmine rice to pan & stir occasionally until it reaches a light brown color (careful not to burn)
Once brown, set aside to cool
Then transfer to a blender or food processor to grind until texture becomes slightly gritty
STEP 3: INSTRUCTIONS FOR SALMON
Slice salmon to approximately 1/2 inch slices
Set aside
STEP 4: INSTRUCTIONS FOR SHRIMP
Bring one pot of water to a boil
Add peeled & deveined shrimp to boiling water
Remove after 90 seconds
Transfer to an ice water bath the remove after 5 mins
Set aside
STEP 5: COMBINE AND PLATE
Bring salmon slices & shrimp to a bowl & incorporate all the ingredients above. Starting with the wet ingredients, to veggies & top it off with ground rice powder
